The Ethiopian chicken celebration platter is the fullest expression of what the chicken chapter of Ethiopian cooking can produce — the red Doro Wat and the golden Alicha Doro providing heat and gentleness, the tibs providing immediacy, and the firfir providing morning-after comfort — all on one large injera.
Ingredients
Equipment: Multiple heavy pots, Large mesob for serving
Assemble from individual recipes:
- Doro Wat — the red centrepiece with eggs
- Alicha Doro — the golden mild stew with eggs
- Doro Tibs — the fast sauté
- Doro Firfir — made from leftover Doro Wat
- Ayib — mound alongside
- Gomen — dark greens
- Tikel Gomen — cabbage
- Large injera as the base
Method
- Day before: make Doro Wat (ETH061) and Alicha Doro (ETH062). These improve overnight.
- Morning of celebration: make Doro Tibs and prepare vegetables.
- 30 minutes before: warm the wats. Make Doro Firfir from leftover Doro Wat.
- Assemble the mesob: large injera as the base, Doro Wat on one side, Alicha Doro on the other, tibs in the centre, firfir at the edges, ayib mounded, greens between the wats.
- Rolled injera in a basket alongside.
Chef Tips
- The two great wats (Doro Wat and Alicha Doro) anchor the platter — everything else is in support.
- The tibs is made last, served immediately hot.
- The firfir is the surprise — made from leftovers of the wats, it is its own celebration.
