Berbere grilled chicken is the modern Ethiopian home cook's answer to oven roasting — the berbere marinade produces a crust of extraordinary colour and complexity, and the yogurt tenderises the meat.
Ingredients
Equipment: Oven at 200°C, Baking tray with rack
- 1 whole chicken — jointed into 8 pieces
Berbere Marinade
- 3 tbsp berbere
- 2 tbsp kibbeh — melted
- 1 tbsp yogurt
- 4 garlic cloves — minced
- 2 tbsp lemon juice
- 1 tsp salt
Method
- Mix all marinade ingredients.
- Score chicken pieces deeply. Rub marinade into every surface and score.
- Marinate 4 hours minimum — overnight is better.
- Preheat oven to 200°C.
- Place on a rack over a baking tray.
- Roast 22—25 minutes until internal temperature 75°C.
- Grill (broil) last 3 minutes for the crust.

- The yogurt in the marinade tenderises through lactic acid.
- The kibbeh carries the fat-soluble berbere compounds deep into the meat.
