Ingredients

Equipment: Large pot for blanching, Bowl of ice water, Wide pan

  • 200g broccoli florets
  • 150g green beans — trimmed
  • 2 medium carrots — julienned
  • 1 courgette — sliced
  • 100g baby corn
  • 3 tbsp butter or oil
  • 3 garlic cloves — sliced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp lemon juice
  • 2 tbsp fresh coriander or parsley

Method

  1. Blanch each vegetable separately in heavily salted boiling water: carrots 3 min, beans and broccoli 2 min, courgette and corn 1 min.
  2. Immediately transfer each to ice water. Drain well.
  3. Heat butter or oil in a wide pan over medium-high.
  4. Add garlic. Cook 30 seconds until fragrant.
  5. Add all blanched vegetables. Toss to coat.
  6. Add lemon juice, salt, and pepper.
  7. Toss with coriander. Serve immediately.
