Tanzanian Mchuzi wa Maboga — pumpkin chunks simmered in a spiced onion and tomato sauce until meltingly tender. A simple, nutritious, and warming Tanzanian vegetable stew — the pumpkin dissolves slightly into the sauce, creating a naturally thickened, slightly sweet result.
Pumpkin stew is one of Tanzania's most accessible vegetable dishes — the natural sweetness of the pumpkin balances the spiced tomato sauce beautifully. As the pumpkin cooks, some of it dissolves into the sauce, thickening it naturally.
Ingredients
Equipment: Large pot
- 600g pumpkin — peeled, seeded, cubed
- 2 onions — diced
- 3 tomatoes — diced
- 3 garlic cloves
- 1 tbsp ginger
- 2 tbsp oil
- 1 tsp curry powder
- 1 tsp turmeric
- 1 tsp paprika
- 2 tsp salt
- ½ cup water
- ¼ cup coriander
Method
- Heat oil. Cook onions until golden.
- Add garlic, ginger, and spices. Stir 1 minute.
- Add tomatoes. Cook 6 minutes until thick.
- Add pumpkin cubes and water.
- Cover and simmer 18—20 minutes until pumpkin is completely tender.
- Some pumpkin will dissolve — this thickens the sauce naturally.
- Garnish with coriander.
