Ingredients
Equipment: Large pot
- 200g sweet potato — cubed
- 150g green beans — halved
- 200g eggplant — cubed
- 1 cup spinach
- 2 medium carrots — sliced
- 400ml coconut milk
- 2 onions — diced
- 4 tomatoes — diced
- 4 garlic cloves
- 1 tbsp ginger
- 3 tbsp oil
- 1 tsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 2 tsp salt
- ¼ cup coriander
Method
- Heat oil. Cook onions until golden.
- Add garlic, ginger, and spices. Stir 1 minute.
- Add tomatoes. Cook 6 minutes until thick.
- Add sweet potato and carrot. Stir to coat. Cook 2 minutes.
- Add coconut milk. Bring to gentle simmer.
- Simmer covered 12 minutes.
- Add green beans and eggplant. Simmer 8 minutes.
- Add spinach. Stir until wilted — 1 minute.
- Garnish with coriander.
Chef Tips
- Add vegetables in order of cooking time — hardest first.
- Never boil coconut milk hard.
- Spinach goes in at the very end — it wilts in seconds.
