🐟 Swahili Coast Fish Tamarind
Samaki wa Pwani wa Ukwaju
Swahili Coast Fish Tamarind — whole fish or thick steaks pan-fried golden, then coated in a thick tamarind-coconut-spice glaze and finished in the pan. The definitive Swahili coast tamarind fish — bolder, stickier, and more dramatically flavoured than the plain tamarind version.
This is the more assertive cousin of samaki wa ukwaju — the whole fish pan-fried first for a crispy exterior, then coated in a thick, sticky tamarind-coconut glaze that caramelises in the pan. The result is intensely flavoured and texturally extraordinary.
Ingredients
Equipment: Large wide pan
- 2 whole fish or 4 thick fish steaks — scored
Marinade: 2 tbsp lemon, 1 tsp turmeric, 1 tsp salt
Tamarind-Coconut Glaze
- 3 tbsp tamarind paste
- 3 tbsp coconut milk
- 1 tbsp honey
- 3 garlic cloves — minced
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp chilli powder
- 1 tsp salt
- 3 tbsp oil for frying
Method
- Marinate scored fish in lemon, turmeric, salt for 15 minutes.
- Mix all glaze ingredients.
- Pan-fry fish in oil over medium-high heat — 5 minutes per side until golden and cooked through.
- Remove fish. Pour glaze into the same hot pan.
- Simmer glaze 2—3 minutes until thickened.
- Return fish. Coat in glaze. Cook 2 minutes each side — glaze caramelises.
- Serve immediately.
Chef Tips
- The pan-fry first, then glaze — this sequence is everything.
- Let the glaze caramelise — do not stir the fish around.
Common Mistakes to Avoid
- Glazing before frying — no crispy base.
- Too much movement during glazing.
The Science

The tamarind-honey glaze caramelises during the final pan cooking — tartaric acid from tamarind partially inverts the sucrose in honey to fructose and glucose, which caramelise at a lower temperature than sucrose alone. This is why tamarind-honey glazes brown faster than plain honey glazes.
