Ingredients
Equipment: Wide pan
- 1 ripe pineapple — peeled, cored, sliced into rings
- 2 tbsp coconut oil or butter
- 2 tbsp honey
- ¾ tsp ground cardamom
- ¼ tsp ground cinnamon
- Pinch of salt
- 1 tbsp lime juice
Serve with: coconut ice cream (TZA164) or yogurt
Method
- Heat coconut oil in a wide pan over medium-high heat.
- Add pineapple rings in a single layer.
- Cook without moving for 3—4 minutes until golden caramelised.
- Flip. Cook other side 2—3 minutes.
- Add honey, cardamom, cinnamon, and salt. Toss to coat.
- Cook 1 more minute until honey bubbles and glazes.
- Add lime juice. Remove from heat.
- Serve immediately with coconut ice cream.

- Do not move the pineapple — contact time creates caramelisation.
