Pineapple and ginger is one of the great flavour partnerships in tropical juice making — the pineapple's sweetness and bromelain depth balanced by the ginger's warming spice. Tanzania produces excellent pineapples in the coastal and highland regions, and this juice makes the most of them.

Ingredients

Equipment: Blender, Fine sieve or muslin cloth

  • ½ large ripe pineapple — peeled, cored, and cubed
  • 3cm fresh ginger — peeled and roughly chopped
  • 3 cups cold water
  • 1 tbsp lime juice
  • 1—2 tbsp honey (to taste)
  • Ice cubes

Method

  1. Blend pineapple and ginger with 1 cup cold water until smooth.
  2. Strain through a fine sieve, pressing the pulp firmly.
  3. Add remaining cold water, lime juice, and honey.
  4. Stir to combine.
  5. Serve over ice.

  • The ginger heat increases over time — if making ahead, use less ginger than you think.
  • Press the sieve pulp firmly — the most concentrated juice is in the pulp.
