It is vegetarian by practice rather than by philosophy — the mountains simply provide.
Heritage & Origin
Origin: Pare people of the North and South Pare Mountains, Kilimanjaro region
The Pare (Wapare) people inhabit the Pare Mountains — a range of dramatic, green peaks rising from the dry plains between Kilimanjaro and the coast. Their mountain environment is fertile and well-watered, producing a variety of vegetables, root crops, and legumes. The Pare are known for their sophisticated pre-colonial irrigation systems, which allowed them to farm the mountain slopes intensively. Pare mountain vegetable stew uses the diversity of produce from their terraced mountain gardens.
Ingredients
Equipment: Large pot
- 200g yam or sweet potato — cubed
- 200g pumpkin — cubed
- 150g green beans — halved
- 2 cups mixed mountain greens — spinach or amaranth
- 3 tbsp groundnut paste
- 1 onion — diced
- 2 tomatoes — diced
- 2 tbsp oil
- 1.5 tsp salt
- 2 cups water
Method
- Heat oil. Cook onion until golden. Add tomatoes. Cook 5 minutes.
- Add yam and pumpkin. Stir to coat. Add water.
- Cover and cook 12 minutes until nearly tender.
- Add green beans. Cook 5 more minutes.
- Mix groundnut paste with ½ cup warm water. Add to pot.
- Add greens on top. Cover 3 minutes until wilted.
- Season. Stir gently.
Chef Tips
- Add harder vegetables first, softer last.
- The groundnut paste enriches without dominating — do not over-add.
