Pare Farmer's Lunch — the midday meal of the Pare mountain irrigation farmers. Yam stew with beans, greens, and pumpkin — a complete, nutritious, entirely plant-based meal that fuels the physical work of mountain terrace farming.
The Pare people developed sophisticated irrigation systems (mifereji) on their mountain slopes long before European contact — channelling mountain water through carved channels to terraced fields. The farmers who maintained these systems needed a complete, nourishing midday meal. This simple yam, bean, and vegetable stew is that meal.
Ingredients
Equipment: Large pot
- 400g yam — cubed
- 1 cup cooked beans
- 200g pumpkin — cubed
- 2 cups spinach or greens
- 1 onion — diced
- 2 tomatoes — diced
- 2 tbsp oil
- 1.5 tsp salt
- 1.5 cups water
Method
- Heat oil. Cook onion until golden. Add tomatoes. Cook 5 minutes.
- Add yam and pumpkin. Add water. Cover and cook 15 minutes.
- Add cooked beans. Cook 8 more minutes.
- Add greens on top. Cover 3 minutes.
- Season with salt.

- Add greens last — they wilt in 3 minutes and lose colour if overcooked.
