Tanzanian avocado toast is what happens when a globally recognised café dish meets Tanzania's extraordinary local ingredients — the avocados grown around Kilimanjaro are larger, richer, and more buttery than any imported variety. The pili pili flakes, the kachumbari salsa, and the sourdough made with Tanzanian wheat flour make this entirely its own thing.
Ingredients
Equipment: Toaster, Small saucepan for poaching
- 2 thick slices good sourdough bread
- 2 large ripe Tanzanian avocados
Kachumbari Salsa
- 2 medium tomatoes — finely diced
- ¼ red onion — finely diced
- 1 green chilli — finely minced
- 1 tbsp fresh lime juice
- 2 tbsp coriander
Toppings
- 2 eggs — poached
- 1 tsp pili pili flakes (or dried chilli flakes)
- Microgreens or rocket
- Flaky salt
- Black pepper
- 1 tbsp lime juice for avocado
Method
- Make kachumbari salsa: combine diced tomatoes, red onion, green chilli, lime juice, and coriander. Season. Rest 5 minutes.
- Poach eggs: simmer water with a splash of vinegar. Swirl. Drop egg. 3 minutes for soft-set.
- Toast sourdough until deeply golden.
- Halve avocados. Scoop flesh. Add lime juice and a pinch of salt. Smash roughly — keep texture.
- Spread smashed avocado generously on toast.
- Spoon kachumbari salsa alongside.
- Place poached egg on top.
- Scatter pili pili flakes, microgreens, flaky salt, and black pepper.
Chef Tips
- Smash, do not purée — the avocado should have texture.
- The kachumbari salsa is what makes this Tanzanian — not a generic avocado toast.
- Use the ripest, most buttery Tanzanian avocado available — the difference is significant.
- Flaky salt over the top just before serving is the finishing touch.
