Ingredients
Equipment: Large pitcher or jar, Fine sieve or muslin cloth
- 8cm fresh ginger — peeled and thinly sliced
- 4 tbsp loose black tea (or 6 tea bags)
- 6 cups cold filtered water
- 3 tbsp honey
- 1 lime — juice
- Ice cubes
- Fresh mint for garnish
Method
- Combine ginger slices and tea in a large pitcher.
- Pour cold filtered water over.
- Refrigerate for 12 hours — do not rush.
- Strain through a fine sieve. Discard ginger and tea.
- Add honey and lime juice. Stir until honey dissolves.
- Taste — adjust honey and lime.
- Serve over ice with fresh mint.
