Ingredients

    Zanzibar Hummus

    • 1 tin chickpeas
    • 3 tbsp tahini
    • 2 garlic cloves
    • 3 tbsp lemon juice
    • 1 tsp ground cumin
    • ½ tsp cardamom
    • 2 tbsp olive oil
    • ½ tsp smoked paprika for topping

    Mini Bhajia (TZA133) — 8 small pieces

      Mini Mishkaki (TZA172) — 4 small skewers

        Avocado Kachumbari (TZA108 + 1 diced avocado)

          Cassava Chips (TZA174) — 1 portion

            Chatni ya Nazi (TZA118)

              Pili Pili Mayo (4 tbsp mayo + 2 tbsp pili pili)

                2 warm chapatis (TZA004) — cut into triangles

                  Method

                  1. Zanzibar hummus: blend chickpeas, tahini, garlic, lemon, cumin, and cardamom until smooth. Drizzle olive oil. Dust paprika.
                  2. Prepare mini bhajia from TZA133.
                  3. Prepare mini mishkaki from TZA172.
                  4. Make avocado kachumbari: combine kachumbari with diced avocado.
                  5. Prepare cassava chips from TZA174.
                  6. Make all sauces.
                  7. Warm chapatis. Cut into triangles.
                  8. Board assembly: hummus in a bowl (centre). Bhajia, mishkaki, chips arranged around. Sauces in ramekins. Chapati triangles upright. Avocado kachumbari in a bowl.

                  • The cardamom in the hummus is the Zanzibar signature — essential.
                  • Everything must be hot when assembled except the hummus and kachumbari.
