    Confit Chicken

    • 4 bone-in chicken thighs
    • 3 garlic cloves
    • 1 tsp thyme
    • 1 tbsp Zanzibar spice blend
    • 200ml olive oil
    • 1 tsp salt

    Zanzibar Pilau Rice (TZA122 base)

    • 4 cups basmati rice
    • 6 cups chicken stock
    • 2 onions — golden fried
    • ½ tsp saffron in warm water

    Modern Garnishes

    • ¼ cup pistachios — roughly chopped
    • ¼ cup pomegranate seeds

    Coriander Oil: 1 cup coriander + 100ml olive oil — blended and strained

      Tamarind Yogurt: 200ml yogurt + 2 tbsp tamarind + 1 tbsp honey

      Method

      1. Confit chicken: place chicken thighs in a tight dish. Cover completely with olive oil, garlic, thyme, and spices. Confit in oven at 140°C for 90 minutes.
      2. Make coriander oil: blend coriander with olive oil. Strain through a fine cloth. Reserve the bright green oil.
      3. Make tamarind yogurt: whisk together.
      4. Cook Zanzibar pilau base (TZA122) using chicken stock from the confit fat.
      5. Pull confit chicken from oil. Shred. Pan-fry briefly in the confit fat for a crispy exterior.
      6. Plate: pilau base → crispy chicken on top → saffron water drizzled → pomegranate seeds → pistachios → fried shallots → coriander oil drops → tamarind yogurt drizzled.
