Ingredients
Equipment: Baking tray with rack, Oven, Basting brush
- 1 kg chicken wings — tips removed, split at joint
Marinade
- 3 garlic cloves — minced
- 1 tbsp ginger — grated
- 1 tsp paprika
- 1 tsp salt
- 1 tbsp lemon juice
- 1 tbsp oil
Kenyan Honey-Tamarind Glaze
- 4 tbsp honey
- 2 tbsp tamarind paste
- 1 tbsp soy sauce
- 1 tsp chilli flakes
- 2 garlic cloves — minced
- 1 tbsp lemon juice
Method
- Marinate wings for 2 hours minimum.
- Preheat oven to 200°C. Place wings on a rack over a baking tray.
- Bake for 20 minutes. Flip. Bake 10 more minutes.
- Make glaze: simmer all glaze ingredients for 3 minutes until slightly thickened.
- Brush wings generously with glaze. Bake 5 minutes.
- Flip, glaze again. Bake final 5 minutes.
- The wings should be deeply lacquered and sticky.
- Serve with extra glaze for dipping.
