Ingredients

Equipment: 20x20cm square baking tin, Bain-marie or microwave, Oven (170°C)

  • 200g dark chocolate (70%) — chopped
  • 150g butter
  • 200g sugar
  • 3 eggs
  • 2 tsp vanilla
  • 1 tsp strong Kenyan espresso
  • 80g all-purpose flour
  • 2 tbsp cocoa powder
  • ½ tsp salt

Method

  1. Preheat oven to 170°C. Grease and line tin.
  2. Melt chocolate and butter together. Cool slightly.
  3. Whisk sugar into chocolate mixture.
  4. Add eggs one at a time — whisk vigorously after each.
  5. Add vanilla and espresso.
  6. Fold in flour, cocoa, and salt. Do not over-mix.
  7. Pour into tin. Bake 22—25 minutes.
