Ingredients

  • 1 tsp strong Kenyan espresso
  • 4 egg yolks
  • 4 egg whites
  • 3 tbsp sugar
  • 200ml whipping cream

Passion fruit coulis

  • 3 passion fruits
  • 1 tbsp honey

Method

  1. Melt chocolate with espresso. Cool to 40°C.
  2. Whisk egg yolks into the cooled chocolate.
  3. Whip cream to soft peaks. Fold into chocolate.
  4. Whisk egg whites to stiff peaks with sugar.
  5. Fold egg whites into chocolate mixture in three additions — gently, maintaining volume.
  6. Spoon into glasses. Refrigerate 3 hours minimum.
  7. Make coulis: blend passion fruit pulp with honey. Strain.
  8. Spoon coulis over the set mousse before serving.
